3 red chicory (200g) or one radicchio of the same weight
160g unsalted butter
115g soft brown sugar
280g golden syrup
2 eggs
85g plain flour
½ tsp bicarbonate of soda
140g ground almonds




To decorate
4 tbsp apricot jam or apple jelly
gold leaf (available from Waitrose)
